#FreeAmosYee Campaign: Singapore Government, Release Amos

Over the past one month, the Singapore government has persecuted a 16-year-old boy, Amos Yee.

He was persecuted for speaking up and criticising Singapore’s first prime minister, Lee Kuan Yew, who has recently passed away.

Amos made a video and called him a “horrible person and an awful leader to our country”. Within two days after Amos posted his video online, Amos was arrested by the Singapore government. Within just another day, he was charged.

He is now currently being held in remand in prison while his case is pending judgment. He has been inside for a total of 18 days now even though he is still innocent. While attending court, Amos was also shackled with chains and cuffs which have eaten his legs and caused him a lot of pain.

The judgment on him will be passed today.

Many people in Singapore and around the world feel that Amos’s persecution is unjust. His persecution has also been seen as being politically motivated as members of the current ruling party, People’s Action Party (PAP), have said worse things than Amos but have gotten away scot-free.

However, Amos has been punished by the PAP just for criticising the PAP’s “founding father” Lee Kuan Yew. But even as Lee Kuan Yew had said worse things than Amos, Lee was never arrested or charged.

However, Amos, who is still only a child, has been subjected to continuous state-violence. This is unacceptable.

More than 100 people from Singapore and around the world have taken photos of themselves to make a video in support of Amos and to call on the Singapore government to release Amos Yee. You can see some of the photos that were taken here.

        Preparation Time: 1 hour
        Cooking Time: 1 hour

        Curry Paste

        10 Dried Chillies
        3 Red Chillies
        6 Buah Keras (Candlenuts)
        4 Cloves of Garlic
        150g Shallots, chopped
        15g Turmeric Powder
        20g Belacan (Shrimp Paste), toasted
        30g Hae Bee (Dried Shrimp)
        35g Ginger, peeled
        35g Galangal, peeled
        2 Lemongrass

        Other Ingredients

        300g Snake Beans, cut into 5 cm length
        1 Large Carrot, peeled and cut into 5 cm strips
        ¼ Cabbage (approx 500g), cut into pieces
        400g Fried Firm Tofu, cut into squares
        300-400 ml Coconut Milk
        500ml Vegetable Stock (or Chicken Stock)
        3 Kaffir Lime Leaves

        Curry Paste

        Soak in hot water till softened:
        Dried Chillies (remove seeds if you prefer a less spicy curry)

        Soak in water till soft:
        Hae Bee

        Cut out the white fragrant base from the Lemongrass, discard the green tops.

        Chop all the Curry Paste Ingredients coarsely, then blend in a food processor till you get a fine Curry Paste.

        Method

        Heat 6 tbsp of oil in a wok, then fry over medium heat till it darkens slightly and becomes fragrant:
        Curry Paste

        Add and bring to a boil:
        300ml Coconut Milk
        500ml Stock
        Kaffir Lime Leaves

        Add, top up with boiling water to just cover it, then simmer over low heat for 30mins:
        Cabbage

        Add and continue to simmer for 10 mins or until tender, top up with more hot water if needed:
        Carrot
        Tofu
        Snake beans

        Before serving, season to taste with:
        Salt
        Sugar
        Up to 100ml Coconut Milk

      Directions
      Preheat the oven to 250 degrees F.

      Heat the olive oil in a large Dutch oven. Add the bacon and cook over medium heat for 10 minutes, stirring occasionally, until the bacon is lightly browned. Remove the bacon with a slotted spoon to a large plate.

      Dry the beef cubes with paper towels and then sprinkle them with salt and pepper. In batches in single layers, sear the beef in the hot oil for 3 to 5 minutes, turning to brown on all sides. Remove the seared cubes to the plate with the bacon and continue searing until all the beef is browned. Set aside.

      Toss the carrots, and onions, 1 tablespoon of salt and 2 teaspoons of pepper in the fat in the pan and cook for 10 to 15 minutes, stirring occasionally, until the onions are lightly browned. Add the garlic and cook for 1 more minute. Add the Cognac, stand back, and ignite with a match to burn off the alcohol. Put the meat and bacon back into the pot with the juices. Add the bottle of wine plus enough beef broth to almost cover the meat. Add the tomato paste and thyme. Bring to a simmer, cover the pot with a tight-fitting lid and place it in the oven for about 1 1/4 hours or until the meat and vegetables are very tender when pierced with a fork.

      Combine 2 tablespoons of butter and the flour with a fork and stir into the stew. Add the frozen onions. Saute the mushrooms in 2 tablespoons of butter for 10 minutes until lightly browned and then add to the stew. Bring the stew to a boil on top of the stove, then lower the heat and simmer for 15 minutes. Season to taste.

      To serve, toast the bread in the toaster or oven. Rub each slice on 1 side with a cut clove of garlic. For each serving, spoon the stew over a slice of bread and sprinkle with parsley.

      Preheat the oven to 425 degrees F.

      Line 2 large baking sheets with aluminum foil and lightly grease with olive oil. Arrange some of the eggplant, zucchini, and yellow squash slices in a single layer on the sheets, slightly overlapping them. Brush with olive oil and lightly season with salt and pepper. Bake until soft and just golden around the edges, 8 to 10 minutes. Remove from the oven and transfer to a plate to cool. Repeat with the remaining vegetable slices.

      In a large bowl, combine the goat cheese with the basil, parsley, and extra-virgin olive oil. Season, to taste, with salt and pepper and mix well.

      In a 6-cup terrine (12 by 3 by 3 inches), arrange the eggplant slices crosswise over the bottom and up the sides, overlapping the slices to completely cover the terrine. The ends of the slices should overhang the sides of the terrine. Top the eggplant with thin layers of red bell pepper, zucchini, yellow squash, spinach, and yellow bell pepper. Crumble a layer of the goat cheese mixture on top of the yellow bell pepper, and repeat the layering with the remaining vegetable slices. Bring the overhanging eggplant slices up over the terrine. Wrap the terrine loosely in plastic wrap. Top with an equal-size terrine or a piece of cardboard wrapped in aluminum foil. Place a brick or heavy pot on top of the terrine and refrigerate for at least 8 hours or for up to 24 hours.

      Remove the terrine from the refrigerator. Remove the weight and unwrap. Slice with a very sharp knife and serve 1 thick or 2 thin slices per person with Sun-Dried Tomato Sauce and toasted croutons.

      Sun Dried Tomato Sauce:
      In the bowl of a food processor, combine the sun-dried tomatoes, balsamic vinegar, garlic, salt, crushed red pepper, and black pepper and puree on high speed. With the motor running, gradually add the olive oil through the feed tube and process until well combined. Pour into a container until ready to serve.

    Make the Chilli Sauce: Combine all the ingredients in a bowl, mix well, and season with salt, to taste. Set aside

    Make the Chicken and Rice: Bring a large pot of salted water to a boil (enough water to immerse the chicken). Stuff the cavity of the chicken with the scallion and ginger. Add the chicken to the boiling water, breast side-down. Lower the heat to a simmer just under boiling point and cook, covered, until just cooked through, about 40 minutes.

    Transfer the chicken to an ice water bath for about 5 to 6 minutes. (This is to arrest the cooking and will make the chicken skin crisp.) Drain. De-bone the chicken and cut into bite-sized pieces. Reserve the chicken stock, and keep hot.

    Heat the oil in a wok or saucepan over high heat. Add the garlic and stir-fry until fragrant. Add the rice and stir-fry for 1 to 2 minutes. Add enough of the hot reserved chicken soup to reach 1/2- inch above the top of the rice. Bring to the boil, add the salt, and lower the heat to low. When steam holes form in the rice, cover the wok, and steam until cooked, about 30 minutes.

    Whisk 1/4 cup of the hot chicken stock into the chilli sauce.

    Arrange the rice and poached chicken on a platter and drizzle with the chilli sauce.

    Instructions

    Process bread to coarse breadcrumbs and soak in milk for 5 minutes.

    Discard tough outer leaves of cabbage. Using a knife, make a cross in the base, cutting about halfway through to form 4 wedges. Prise wedges apart slightly and cut out and discard core from each wedge.

    Immerse cabbage, cut-side up, in a large, heavy-based saucepan of boiling salted water. Reduce heat to medium and cook for 45 minutes or until cabbage starts to soften. Cool under cold water and drain well. Wipe pan clean and reserve. Place cabbage, cut-side down, on a work surface. Remove and reserve outer leaves (about 10) until you reach the centre leaves which are too tightly packed to remove. Using scissors, cut a V-shape into each reserved outer leaf to remove tough centre rib. Set trimmed outer leaves aside for wrapping the stuffed cabbage.

    Finely chop remaining tightly packed cabbage and combine with pancetta, pork belly fat, minced pork, finely chopped onion, herbs, garlic, silverbeet and eggs. Season with salt and pepper.

    Line a bowl roughly the size of the original cabbage with muslin*, allowing edges to hang over rim of bowl. Place trimmed outer leaves, reserving 3, slightly overlapping, around base and side of bowl, allowing top edges to hang over rim of bowl. Place pork mixture in centre, top with reserved 3 leaves and fold in overhanging leaves to enclose mixture. Fold in muslin, gather at top and twist, pressing cabbage to reform its original shape. Secure with kitchen string or an elastic band, then wrap string several times around cabbage and tie to secure.

    Place remaining onion and carrot in reserved pan. Lower in cabbage and cover with stock and 500ml water. Bring to the boil, then reduce heat to low, cover and cook for 2½ hours or until very tender. Carefully transfer cabbage to a plate and rest for 10 minutes. Reserve cooking liquid. Remove muslin and serve cabbage, with liquid drizzled over.

    Remove any fat and gristle from the roast and cut into strips 1/2 inch thick by 2 inches long. Season with 1/2 teaspoon of both salt and pepper.
    In a large skillet over medium heat, melt the butter and brown the beef strips quickly, then push the beef strips off to one side. Add the onions and cook slowly for 3 to 5 minutes, then push to the side with the beef strips.
    Stir the flour into the juices on the empty side of the pan. Pour in beef broth and bring to a boil, stirring constantly. Lower the heat and stir in mustard. Cover and simmer for 1 hour or until the meat is tender.
    Five minutes before serving, stir in the mushrooms, sour cream, and white wine. Heat briefly then salt and pepper to taste.

    1 cup plain whole milk Greek yogurt
    2 tablespoons olive oil
    2 teaspoons paprika
    1/2 teaspoon cumin
    1/8 teaspoon cinnamon
    1 teaspoon crushed red pepper flakes (reduce to 1/2 teaspoon if you don’t like heat)
    Zest from one lemon
    2 tablespoons freshly squeezed lemon juice, from one lemon
    1-3/4 teaspoons salt
    1/2 teaspoon freshly ground black pepper
    5 garlic cloves, minced
    2-1/2 pounds boneless skinless chicken thighs (or 2 pounds boneless skinless chicken breasts), trimmed of any excess fat and cut into large bite-sized pieces
    1 large red onion, cut into wedges
    Vegetable oil, for greasing the grill
    Instructions

    In a medium bowl, combine the yogurt, olive oil, paprika, cumin, cinnamon, red pepper flakes, lemon zest, lemon juice, salt, pepper and garlic.
    Thread the chicken onto metal skewers, folding if the pieces are long and thin, alternating occasionally with the red onions. Be sure not to cram the skewers. (Note: You’ll need between 6-8 skewers.) Place the kebabs on a baking sheet lined with aluminum foil. Spoon or brush the marinade all over the meat, coating well. Cover and refrigerate at least eight hours or overnight.
    Preheat the grill to medium-high heat. To grease the grill, lightly dip a wad of paper towels in vegetable oil and, using tongs, carefully rub over the grates several times until glossy and coated. Grill the chicken kebabs until golden brown and cooked through, turning skewers occasionally, 10 to 15 minutes. Transfer the skewers to a platter and serve.

    2 cups cooked rice
    100 gms dried small anchovies
    5 garlic cloves, minced
    5 shallots, sliced thinly
    1 tablespoon black bean chilli paste
    salt and pepper to taste
    3 tablespoon cooking oil
    1 egg, fried
    Directions
    Prep:5min › Cook:15min › Ready in:20min
    Heat oil in saucepan and saute the dried anchovies until it is slightly crispy. Throw in the garlic and shallots and stir for a few minutes. Add the black bean chilli paste and stir until fragrant.
    Crumble the leftover cooked rice so it’s not too lumpy. Add a little rice at a time to the saucepan, stirring and incorporating all the ingredients together.
    Serve the rice hot and top with fried egg.
    Tip
    Instead of topping it with fried egg you can add beaten egg into the sauce , scrambling it before stirring in the rice.

        Instead, try the following which is as nasty as your personality!

        You will need (feeds 8 hungry fellows):

        1 large onion peeled and finely chopped
        6 cloves of garlic, finely chopped
        A dollop of duck fat (I used beef dripping)
        Half a bunch of marjoram (pick the leaves off and chop finely)
        1/2 tsp mace
        1/2 tsp allspice
        1 litre of fresh pigs blood
        150g Polenta
        Salt and pepper
        250g pork back fat
        A bread tin lined with cling film
        Method:

        In a pan large enough to contain all of the ingredients, sweat the onion and garlic in the fat until they are clear and soft, but not browned
        Add the marjoram, spices, blood and polenta and stir on a low heat until the blood starts to thicken
        Once it reaches a runny porridge consistency, it’s time to taste the mixture. This is defiantly not one for the squeamish. Adjust the seasoning
        Stir the back fat through. The mixture should be thick enough to suspend the fat, rather than it sinking to the bottom
        Decant into the bread tin and cover with tin foil.
        Place a tea towel into a deep roasting tin, and pop the bread tin on top. Fill the roasting tin with water, but make sure you don’t go over the rim of the bread tin.
        Cook in a low to medium oven (around 160-170) for an hour and a half. Check with a knife that it’s cooked through. It should come out clean.
        Remove from the dish and allow to cool. It keeps pretty well in the fridge.
        When you want to use the blood pudding, just cut off 1cm slices and fry until heated through. It’s perfect with eggs and bacon for breakfast.

        How to make it

        Now for the intellectually challenged – Pig Brain’s Soup!

        8 slices dang gui, or 15 slices American ginseng
        1 pig brain, cleaned as described above
        100 g lean pork, rinsed
        2 Chinese dried red dates, rinsed

        Put all ingredients in a small bowl or ramekin that can hold 300 ml (1¼ cups). Add ½ cup water. Cover the bowl or ramekin, with aluminium foil if it doesn’t have a proper cover. Double-boil with gently simmering water for 3 hours. If you like, remove the herbs and dates, which are not eaten. Serve hot.

        Typically, pig brain soup is taken just before going to bed so that it’s not eaten with other stuff that might negate the benefits of the brain and herbs. Anything acidic such as oranges is a big no-no till the soup is digested and absorbed! As are salt and pepper in the soup for the same reason.

        I’m not saying Amos cannot air his disagreements w how things run in this country. I also have disagreements. More tact and consideration should be exercised. Else one has to face repercussions for his own actions, be it 16 or 60. I’m glad the courts grant him probation. But i hope he doesn’t break the terms again in his own perceived rights. Else no one wins in the end.

    INGREDIENTS

    1 (5- to 6-lb) Long Island duck (also known as Pekin)
    2 cups boiling-hot water
    1 tablespoon kosher salt
    1 teaspoon black pepper
    PREPARATION

    Put oven rack in middle position and preheat oven to 425°F.

    If necessary, cut off wing tips with poultry shears or a sharp knife. Remove and discard excess fat from body cavity and neck, then rinse duck inside and out. Prick skin all over with a sharp fork. Fold neck skin under body, then put duck, breast side up, on a rack in a 13- by 9- by 3-inch roasting pan and pour boiling-hot water over duck (to tighten skin). Cool duck, then pour out any water from cavity into pan. Pat duck dry inside and out, reserving water in pan, then rub duck inside and out with kosher salt and pepper.

    Roast duck, breast side up, 45 minutes, then remove from oven. Turn duck over using 2 wooden spoons, and roast 45 minutes more. Turn duck over again (breast side up), tilting duck to drain any liquid from cavity into pan. Continue to roast duck until skin is brown and crisp, about 45 minutes more (total roasting time: about 2 1/4 hours). Tilt duck to drain any more liquid from cavity into pan. Transfer duck to a cutting board and let stand 15 minutes before carving. Discard liquid in roasting pan.

      Another brain-food (literally) for the intellectually challenged – Pig Brain Omelette!

      1 pig brain, cleaned as described above, and cut into small, bite size pieces
      2 eggs
      2 tsp light soya sauce
      couple of dashes ground white pepper
      ½ tsp Shaoxing wine
      small pinch of sugar
      3 tsp vegetable oil
      1 tbsp roughly chopped Chinese parsley

      I like to add 1 tbsp milk/water/stock per egg when making omelettes but not for a ‘brainy omelette’ because there’s quite a bit of water in the crevices.

      Beat all ingredients except oil and Chinese parsley till thoroughly combined. Heat wok or frying pan (18 cm would be just right) till very hot. Add 2 tsp oil and heat till almost smoking. Add egg mixture. Fry over medium heat till bottom is lightly golden, pushing edges to the middle so that the omelette cooks evenly. When eggs are 75% set, cut omelette into 4 pieces with a spatula. Turn each piece over. Add Chinese parsley. Drizzle with 1 tsp oil. Fry till the second side is also lightly golden brown. Plate and serve

        Ingredients
        (Serves 3 – 4)

        1 bundle mung bean vermicelli (tang hoon, 冬粉)
        1 carrot, medium size
        2 – 3 leaves wonbok/ chinese cabbage/ hakusai
        10 pcs fresh sugar snaps
        3 – 4 pcs dried black fungus
        3 – 4 pcs small bean curd puff
        2 – 3 pcs dried bean curd sticks
        2 – 3 cloves garlic
        2 – 3 stalks baby leeks, white parts only
        A handful of dried lily bulbs

        1/2 cup water
        1 pcs red fermented beancurd, nam yee “南乳” (optional)
        1 tbsp oyster sauce
        Dash of pepper
        Salt, to taste
        1 tbsp cooking oil

        1. Soak the mung bean vermicelli until it has softened. Drain and set aside.

        2. Break the dried beancurd sticks into smaller pieces and soak in water until it has softened. Cut it into desirable sizes, drain and set aside.

        3. Finely chop the garlic.

        4. Rehydrate both the dried lily bulbs and black fungus by soaking it in hot boiling water for about 15 minutes or until it has softened.

        5. Cut the hard ends of the dried lily bulb and tie it to a knot. It’s ok if you don’t want to tie a knot.

        6. Finely slice the rehydrated black fungus, removing the hard core.

        7. Thinly slice the beancurd puffs. Set aside.

        8. Cut the baby leeks into 1″ length.

        *You can replace baby leeks by using 1 – 2 shallots, cut into wedges.

        9. Slice the chinese cabbage into 1cm length.

        10. Peel off the skin of carrot, and thinly slice it.

        11. Deep fried the rehydrated dried beancurd sticks until golden brown. Drain and set aside.

        12. Heat up a pan with 2 tbsp cooking oil, and stir fry the garlic until lightly browned.

        13. Add in the baby leeks/ shallots and continue to stir fry for another 1 minute.

        *If you are using the red fermented beancurd, add it in at this stage too.

        14. Add in sliced black fungus, beancurd puffs, lily bulbs into the pan. Mix well and stir fry for another 1 minute.

        15. Add in chinese cabbage, deep fried beancurd sticks, soaked mung bean vermicelli and water. Bring the water to boil.

        16. Then season it with oyster sauce, pepper and some salt. Continue to cook until the chinese cabbage has softened and mung bean vermicelli are cooked.

        17. Lastly add in the carrot and sugar snaps. Mix it well and continue to cook until carrot and sugar snaps reaches the textures of your preference. Serve immediately.

      Another Dish to improve brain function – Deep-fried Brains! You’ll need it, and you’re welcome 🙂

      Ingredients

      1 head of garlic, skin on
      Black peppercorns in a cheesecloth
      1 bay leaf
      bundle of fresh herbs
      1 pound brains (lamb, pork, or calf)
      All purpose flour
      2 eggs
      1/2 cup milk
      1 cup panko bread crumbs
      1 quart vegetable oil for deep-frying
      For the green sauce:
      1 bunch parsely, leaves only
      1/2 bunch dill
      1 small can of anchovy fillets, finely chopped
      12 cloves of garlic, finely minced or grated
      1 tablespoon capers, minced
      1/4 cup extra virgin olive oil, or to taste
      Freshly ground black pepper
      Procedures

      Bring a 2 quart pot of water to simmer and add in the garlic, peppercorns, and herbs. Simmer for 15 minutes. Then gently lower the brains into the pot and simmer for 6 minutes. Remove the brains with a slotted spoon and let cool. When the brains are cold and firm, separate the lobes into 2 inch chunks.

      Meanwhile, prepare 3 bowls with the flour, the egg whisked with milk, and the breadcrumbs.

      Heat the oil to 350°F. Roll each brain segment in flour, then coat it in the egg mix, then coat it in the breadcrumbs. Deep-fry the brain until they are golden brown and crispy, about 3 minutes. Drain on paper towels and serve immediately with green sauce.

      To make green sauce: Finely chop herbs and mix with the anchovies, garlic, and capers. Add enough olive oil so that the mixture is spoonable but not runny. Season with black pepper.

        Kumquat and Pink Pepper Spritzer
        Makes 10-12 (8-ounce) drinks
        1 cup sugar
        1 cup water
        2 teaspoons dried pink peppercorns, lightly crushed
        About 24 kumquats, sliced into rounds and seeded
        Ice (optional)
        About 3 liters soda water

        Combine sugar and water in a small saucepan. Bring to a boil, then simmer for 5 minutes, stirring to dissolve the sugars.

        Stir in pink peppercorns, remove from heat, and let stand for 30 minutes. Strain syrup through a fine-mesh strainer and reserve pink peppercorns for garnish. Let syrup cool completely.

        For each drink, muddle 12 kumquat slices and 2 tablespoons of syrup in an 8-ounce glass. Add ice cubes if desired, then fill glass with soda water and stir. Garnish with a few pink peppercorns.

      Original recipe makes 4 servings
      2 tablespoons bacon grease
      1 large onion, chopped
      3 cloves garlic, chopped

      Stir in tomatoes, reserving liquid. Stir liquid into a medium bowl with flour and sour cream; mix until well blended, then slowly add mixture to chicken, stirring constantly. Cook until mixture is thick.

        1. 6 garlics.
        2. 2 onions.
        3. 1 centimeter ginger.
        4. 3 ladles (senduk) chili paste.
        5. 3 ladles (senduk) tomato sauce.

        7. 3 potatoes – boiled and blend with a bit of water (to puree).
        8. 1 egg – slightly beaten.

        Directions

        1. Boil steak bones with 1 tablespoon soup powder (rempah sup) till steak is tender, about 2 to 3 hours. But if using pressure cooker, it will take only 30 minutes or so.

      2 (14 ounce) cans chicken broth
      2 cups water
      2 cubes chicken bouillon
      16 ounces sour cream

      Directions
      Melt the butter in a large Dutch oven over medium-high heat. Season the chicken pieces with a little salt and pepper, then place them in the pan. Cook, turning as necessary, until the skin is evenly browned.
      Pour the chicken broth and water into the pot, and bring to a boil. Stir in the bouillon cubes until dissolved. Simmer over low heat for 35 to 45 minutes, or until chicken is almost falling off of the bone.
      Remove the chicken pieces from the pot and set aside. Stir the sour cream into the broth. Taste and adjust seasoning if needed. Serve chicken with sauce over rice or noodles.

      Asian Pear Sparkler
      Makes about 6 drinks
      1 cup freshly pressed Asian pear juice*
      1 teaspoon lemon juice
      3/4 cups honey
      1/4 cup sugar
      1 (4-inch) sprig fresh rosemary
      1 (1-inch) piece fresh ginger, peeled and cut into coins
      Small grating of fresh nutmeg
      Ice
      Soda water

      Combine pear juice, lemon juice, honey, sugar, rosemary, ginger, and nutmeg in a saucepan over medium heat. Bring to a boil, then simmer on low heat for 5 minutes, stirring to dissolve the sugars.

      Remove from heat and let stand 30 minutes. Strain the syrup through a fine-mesh strainer and discard the solids. Let syrup cool completely.

      To serve, fill an 8-ounce glass halfway with ice cubes, add 3 tablespoons of syrup, fill with soda water, and stir. Add more syrup for a sweeter or stronger flavor.

      *Note: Use the most flavorful Asian pear you can find; Hosui is a consistently sweet variety. Making 1 cup of juice requires about 1 (12-ounce) pear, peeled and cored.
